Apple Brandy Pork Chops

The combination of apples, pork chops, and cream creates a rich, velvety sauce that you'll crave every autumn!  This is a perfect meal to invite guests over to share in the fall bounty.

Apple Brandy Pork Chops

Ingredients

  • 2 Tbsp. olive oil
  • 4 pork chops
  • 2 shallots, minced
  • 2 apples, wedged
  • 2 Tbsp. apple brandy (not apple-flavored, made from apples)
  • 1 cup apple cider
  • 1/2 cup cream
  • 2 Tbsp. butter
  • 2 Tbsp. golden raisins
  • salt & pepper, to taste
Serves 4
Cook Time: 25 minutes

​​Heat a large sauté pan over medium-high heat.  Season pork chops on both sides with salt and pepper, add oil to pan and when oil shimmer add pork chops.  Sear on both sides until browned and crispy, remove from pan and set aside.  Add shallots and cook until translucent, add apples and cook for a minutes or two, allowing the outsides to get some color.  
Deglaze pan with brandy, allow alcohol to cook off and add cider and stock.  Return pork chops to pan and let cook through.  When pork chops are cooked, remove from pan again and add cream, butter, and raisins.  Whisky up any browned bits stuck to the bottom of the pan, simmer the cream mixture for a few minutes, until thickened.  Serve warm with pan sauce drizzled over pork chops and apples.

I just wanted to thank you, I've been looking for a pork chop recipe using apple cider but NOT Dijon mustard, lol. Yours is perfection, TY!
