Berry Clafoutis

This dessert is super easy to make: despite it's fancy French name, it's very similar to a pancake.  Make the batter up to a day in advance, then line your baking dish with berries and pour the batter over.  Bake and dust with powdered sugar.  If you have leftovers, which I doubt you will, they will be great for breakfast!

Berry Clafoutis

Ingredients

  • 1 cup half and half
  • 1/3 cup sugar
  • 3 eggs
  • 1 Tbsp. vanilla
  • zest of 1 lemon
  • 6 Tbsp. flour
  • 2 Tbsp. Calvados
  • 3 cups berries of your choice (I like blueberries and raspberries)
  • 2 Tbsp. powdered sugar
Serves 6-8
Cook time: 45 minutes

Preheat oven to 350 and butter a 5 or 6 quart oven-safe dish.  Sprinkle berries around dish.  Combine all ingredients except berries and powdered sugar in a blender an blend a few pulses until it is one coherent batter.  Pour batter over berries and bake 45 minutes to one hour.  Clafoutis will be puffed and golden when done and a knife inserted into the center will come out clean.
Dust with powdered sugar and serve immediately.
