Ingredients
- 2 Tbsp. coconut oil
- 1 onion, diced
- 3 cloves garlic, grated
- 1 Tbsp. ginger, grated
- 1 Tbsp. lemongrass paste (or fresh lemongrass)
- 1 tsp. cumin powder
- 1 tsp. chili powder
- 1 tsp. ground coriander
- 1 Tbsp. garam masala
- 1 14 oz. can fire-roasted tomatoes
- 1 14 oz. can coconut milk
- 1 cup dried black-eyed peas
- salt, to taste
- chopped cilantro, for garnish
