Black-Eyed Pea Curry

This is a quick and easy curry to throw together for a delicious and healthy dinner.  Serve over rice, couscous, quinoa, or even grits.  It's sure to be a favorite!

Black-Eyed Pea Curry

Ingredients

  • 2 Tbsp. coconut oil
  • 1 onion, diced
  • 3 cloves garlic, grated
  • 1 Tbsp. ginger, grated
  • 1 Tbsp. lemongrass paste (or fresh lemongrass)
  • 1 tsp. cumin powder
  • 1 tsp. chili powder
  • 1 tsp. ground coriander
  • 1 Tbsp. garam masala
  • 1 14 oz. can fire-roasted tomatoes
  • 1 14 oz. can coconut milk
  • 1 cup dried black-eyed peas
  • salt, to taste
  • chopped cilantro, for garnish
Serves 4
Cook Time: 30 minutes

Heat coconut oil over medium heat until it shimmers; add onion and soften, then add garlic, ginger, and lemon grass and cook for 1 minute.  Add spices and coat onion and in spice mix.  Add fire-roasted tomatoes and coconut milk.  Bring mixture to a simmer and add black-eyed peas.  Cool for about 30 minutes, or until peas are cooked through.
Serve over rice, couscous, quinoa, or any starch you'd like!
