- 4 boneless skinless chicken thighs
- 2 Tbsp. avocado oil
- 8 cups salads greens of your choice
- 1 cup cherry tomatoes, halved
- 1/2 a red onion , sliced
- 1 pint cherry tomatoes, sliced in half
- 2 avocados , sliced
- Fresh parsley leaves , to garnish

- 1/3 cup avocado oil
- 1/4 cup red wine vinegar
- 1 shallot, minced
- 1/2 cup parsley, minced
- 1/4 cup cilantro, minced
