Fennel & Mandarin Salad
Ingredients
- 2 Tbsp. olive oil
- 1 1/2 Tbsp. white balsamic vinegar
- 1 fennel bulb, sliced very thin
- 3 mandarins, peeled and sectioned
- lemon juice
- 1/4 cup fresh parsley, chopped
- salt & pepper, to taste
So easy to make and perfect for making in advance! Just make sure you don't skimp on the acids to coat the fennel or it will brown on you. Make this refreshing salad a day in advance and toss up before serving. This goes great with something rich, like Shrimp Scampi!
