Maple Roast Parsnips

These are a wonderful holiday side dish, but are great anytime you can find parsnips!  They're an easy addition to any meal.

Maple Roast Parsnips

Ingredients

  • 2 lb. parsnips
  • 2 Tbsp. avocado oil
  • 1/4 cup maple syrup
  • Salt & pepper, to taste
Serves 8 - 10
Cook time: 30 minutes

​Preheat oven to 400.
Cut parsnips in half where the thin part and thick part meet; leave the thin parts as is, but slice the thicker parts in half or quarters lengthwise so they are all roughly the same size.  Toss parsnips is avocado oil and spread evenly on baking sheet.  Drizzle with maple syrup and roast for 30 minutes.
