Pepper Jelly Turkey Meat Loaves

Here's another recipe for that holiday pepper jelly.  It's a twist on a traditional beef meat loaf - individual turkey loaves filled with roasted red peppers and topped with pepper jelly.   I had too much topping and it burned a little, so don't mind the tray, it came off just fine.

Pepper Jelly Turkey Meatloaves

Ingredients

• 1 lb. ground turkey
• 1 onion, minced
• 1 bell pepper, minced
• 2 roasted red peppers, minced
• 4 cloves garlic, minced
• 1 cup breadcrumbs
• 2 eggs, beaten
• 3 Tbsp. Worcestershire sauce
• 1/2 cup pepper jelly
• 1/4 cup ketchup
• salt & pepper, to taste

Serves 4 
Cook Time: 45 minutes

Preheat oven to 400.
Heat a medium sauté pan over medium heat and sauté onion and bell pepper until softened; add garlic and sauté one more minute.  Set mixture aside to cool.
Once cooled, combine with ground turkey, roasted red pepper, breadcrumbs, eggs, and Worcestershire sauce until all ingredients are evenly dispersed.  Shape into 4-6 individual meatloaves.  Meanwhile, microwave pepper jelly until it is liquid enough to be poured or brushed over meatloaves (just a few seconds).  Combine jelly with ketch and top meatloaves with half the mixture.   
Bake until a thermometer register 165 about 45 minutes.  Top with the remaining pepper jelly/ketchup mixture and serve.
