- 2 Tbsp. avocado oil
- 1 1/2 lb. pork, thinly sliced (use something inexpensive, I like assorted pork chops or country ribs)
- 2 Tbsp. taco seasoning
- 1 avocado, sliced
- salt, to taste
- soft shell taco tortillas

Radish Salsa
- 1 cup radishes, diced
- 2 scallions, sliced
- 2 Tbsp. lime juice
- 2 cloves garlic, grated
- 1/4 cup cilantro, chopped
- 1 cup snow peas, thinly sliced
- salt & pepper to taste
