Pork Tacos with Radish Salsa

These quick little pork tacos are a new twist on tacos with the radish salsa.  I made them as a way to use up a bumper crop of radishes, but can easily be made with store-bought radishes for an inexpensive weeknight meal.  I used a white variety of radish, which is why they look so anemic - any variety will do just fine.

Pork Tacos with Radish Salsa

Ingredients

Tacos

  • 2 Tbsp. avocado oil
  • 1 1/2 lb. pork, thinly sliced (use something inexpensive, I like assorted pork chops or country ribs)
  • 2 Tbsp. taco seasoning
  • 1 avocado, sliced
  • salt, to taste
  • soft shell taco tortillas
  • Radish Salsa

  • 1 cup radishes, diced
  • 2 scallions, sliced
  • 2 Tbsp. lime juice
  • 2 cloves garlic, grated
  • 1/4 cup cilantro, chopped
  • 1 cup snow peas, thinly sliced
  • salt & pepper to taste
Serves 4
Cook time: 20 minutes

Combine salsa ingredients and set aside to marinate.  Heat oil in a medium sautee pan over medium-high heat.   Toss pork strips in taco seasoning (add salt, if needed) and sear in oil.  Serve in taco shells with sliced of avocado and radish salsa.
