Port Sauce
Ingredients
- 2 Tbsp. butter
- 1 shallot, minced
- 2 cups ruby port
- 1 cup chicken stock
- 1/4 cup currant jelly
- salt, to taste
My port sauce is easy and delicious! It goes great with steak, pork, or roast chicken...or in this case, quail! Though the recipe calls for currant jelly, pretty much any jelly will do...the dark red of the currant jelly helps add to the deep red color of the sauce, but you're really looking for something sweet with a hint of fruit....use whatever jelly or jam is in your refrigerator.
