Portobello & Broccoli Stir-Fry

This is a quick and easy dinner to make.  It's vegetarian, so it cooks up quickly, but the Portobellos really fill you up.  Pictured here with noodles, it goes great with rice or quinoa.

Portobello & Broccoli Stir-Fry

Ingredients

Stir-Fry

  • 2 Tbsp. coconut oil
  • 1 large onion, sliced
  • 1 bell pepper, diced
  • 2 large portobello, gills removed, sliced
  • 1 head broccoli, cut into florets
  • 1 cup snow peas
  • 1 tsp. sesame seeds
  • Stir-Fry Sauce

  • 1/4 cup ponzu sauce
  • 1/4 cup dry white wine
  • 2 Tbsp. hoisin
  • 2 Tbsp. soy sauce
  • 1 Tbsp. sesame oil
  • 2 cloves garlic, grated
  • 1 Tbsp. ginger, grated
  • 1 Tbsp. lemon grass paste
Serves 2-3
Cook Time: 45 minutes

​In a large sauté pan or wok cook onion and pepper over medium to medium-high heat, once they begin to soften add portobellos and cook until liquids begin to evaporate, then add broccoli and cook to your liking (I like my broccoli fairly crisp).
Meanwhile, combine all stir fry ingredients in a mason jar and shake until combined.  Once broccoli is cooked enough add stir fry sauce to pan along with snow peas.  Cook just to combine and deglaze pan.
Serve with rice or quinoa and garnish with sesame seeds.
