Sardine Cakes
Ingredients
- 2 Tbsp. avocado oil
- 3 small red potatoes (or any waxy potato)
- 2 scallions, chopped
- 2 garlic cloves, chopped
- 1 jalapeño, chopped
- 1 roasted red pepper, chopped
- 1/4 cup parsley, chopped
- 1 egg, beaten
- 1/2 cup panko
- 2 tins sardines packed in water
- Salt & pepper, to taste
