Ingredients

- 1/4 tsp. cream of tartar
- 1/2 tsp. vanilla
- 1 cup flour
- powdered sugar, for sprinkling

- 3 large egg yolks, at room temperature
- 1/4 cup granulated sugar
- 8 oz. mascarpone, softened
- 1/2 tsp. vanilla extract
- 1 cup heavy cream, cold

- 1 cup strong espresso or coffee (espresso preferred)
- 1/4 cup dark rum
- 2-3 Tbsp. cocoa powder
