Tomato Zucchini Bake

A great way to use up an overabundance of summer squash and zucchini!  Happens to be delicious and easy to make too!

Tomato Zucchini Bake

Ingredients

  • 3 lb. zucchini, chopped
  • 3 lb. summer squash, chopped
  • 2 pints cherry or grape tomatoes, halved lengthwise
  • 2 Tbsp. olive oil
  • 6 cloves garlic, minced
  • 1 1/2 cups Parmesan, grated, divided
  • 1/2 cup basil, chopped, divided
  • 1/2 cup parsley, chopped, divided
  • salt & pepper, to taste
 
Serves 16 - 18
Cook time: 40 minutes

Preheat oven to 350.  Grease two 3-quart baking dishes.
Toss chopped vegetables in olive oil, garlic, half the Parmesan and half the herbs.
Transfer the vegetables to the prepared baking dish and bake for 25 minutes, covered; uncover and bake another 10-15 minutes.  
Sprinkle with remaining Parmesan and herbs and serve immediately.
