Ingredients
- 3 lb. zucchini, chopped
- 3 lb. summer squash, chopped
- 2 pints cherry or grape tomatoes, halved lengthwise
- 2 Tbsp. olive oil
- 6 cloves garlic, minced
- 1 1/2 cups Parmesan, grated, divided
- 1/2 cup basil, chopped, divided
- 1/2 cup parsley, chopped, divided
- salt & pepper, to taste
